The Ritual of Daily Baking informs Achime Bagel’s interior design
JOJOWORKSHOP takes over the design of Achime Bagel, a neighborhood bakery located in Munjeong-dong, Seoul. The project aims to create a small space that could gently accompany the beginning of each day. The bakery follows a daily production and sales system, preparing and selling fresh bagels within the same day. The architects’ straightforward and diligent approach is expressed throughout the interior. Rather than creating a highly decorative bakery, the design focuses on revealing the daily process of making bread and the people who prepare it. An open kitchen forms the central scene of the space. The movements of preparing ingredients, shaping dough, and baking bagels are intentionally exposed, allowing visitors to observe the rhythm of the morning. The workspace and customer area are closely connected, so the warmth of freshly baked bread and the activity of the kitchen become part of the spatial experience.
The interior uses a restrained palette of white surfaces, warm timber, stainless steel, green tiles, and vivid red accents. White surfaces create a clear and bright background, while timber adds warmth and familiarity. Stainless steel is used in areas that require durability and hygiene, and red is introduced as a direct visual signal that gives the space energy and identity. Custom furniture and objects are designed as extensions of the brand narrative.

JOJOWORKSHOP Turns Bagel Forms Into Functional Furniture
The Achime Pickup Wall is created for takeaway and delivery orders. Its form imagines bagels piled together, each one waiting to leave the bakery. The shelves and cabinets can be moved or detached, allowing the furniture to respond flexibly to different operational needs. The design team at JOJOWORKSHOP draws from the image of a rolled message being unfolded to create the Achime Sign Board. The board communicates the bakery’s good news and future plans to visitors in a warm and approachable way. At the entrance, a circular timber handle directly recalls the shape of a bagel. Made from solid wood and enlarged to a diameter of 180 millimeters, the handle turns a familiar form into a small architectural gesture.
Most of the furniture is custom-made to fit the compact dimensions of the bakery. The production process involved repeated adjustments to circulation, storage, equipment placement, and customer movement. Each element is designed not only as a visual object but also as a practical tool that supports the bakery’s daily routine. Through these details, Achime Bagel transforms the ordinary act of buying bread into a modest morning ritual. The project seeks to express freshness, movement, warmth, and care through the honest relationship between work, material, and space.
